Hey everyone!
Day 11....how is everyone feeling? More energy yet? Sugar cravings gone?
I am doing well, eating more fruit & nuts that I would like, but am working on it! I have a snowshoe/fondue night with my team from work tonight.....should be interesting. I have packed lots of paleo snacks. It will be fun to pull out my bags of beef jerky & almonds while everyone else dips cake into chocolate....

I'm feeling the same...still tired in the mornings and taking awhile to wake up. But then again, I've never been a morning person!
B: 1 egg/2 egg white omelet with spinach, onion, tomato & salsa/guac, 1/2 leftover turkey sausage, (small) fruit salad, coffee with coconut milk.
hopefully this will last me until recess because yesterday, I was hungry again by 9am!
I, too, am working on cutting down on the fruit but given the choice between fruits and veggies, i'll take fruit any day!

2 eggs, fried ham and fruit salad (pomegranate, blueberries, grapes and bananas); black coffee. It was a bit of a challenge to chase the fruit salad onto a fork first thing in the morning.
Prepping the fruit salad the night before made a big difference this morning.
We've been experimenting with coconut oil. I don't really like coconut so I was afraid I would be able to taste it but it actually has no flavour at all. It smokes at a lower temperature than I thought it would though. Olive oil is still better for hot frying.
Lunch will be pork chops, salad and raisins.
Dinner is halibut with maybe some kind of salsa or chutney.
My biggest struggles are the convenience factor, not caving when I'm suddenly starving and sauces. The pork chops looked so sad all alone in the pan this morning. I could hear them calling out to the sesame teriyaki marinade. "We are so juicy and delicious together!" Mustard it is.

i woke up before my alarm even went off and felt great! maybe thats because i went to bed at 9:30... ahhhh i love my sleep :)
i was hungry and had some time before work so i tried to make paleo pancakes...interesting....so i mashed up a banana, egg, almond butter, vanilla and cinnamon. they were very flat and im not sure if i liked them yet... but i topped them with lots of berries.
then i had a fried egg and orange.
fun fact: i didn't have coffee this morning!! didn't feel like i needed it. ill prob have an american in a hour with a half a lara bar.
I am still going through something im not used to which is over eating!?!? i dont know if im surpassing my recommended caloric intake or not but i feel like my entire day revolves around what am i gonna eat next and when. This def didnt happen last time we did a 30day challenge but i also didnt cut out beer/wine etc last time so maybe its a sugar craving thing?
D: Rib eye steak w/ red peppers and spicy baked yam fries.
Sn: Not long after dinner i had paleo cereal w/ almond milk and then again at about 10.
B: 2 pc bacon, 2 eggs, 1/2 grapefruit, black coffee.
I made a mango smoothie w/ water and ice for a snack and tried it this morning and its not good. at all. i'll choke that down at 1030 for a snack.

I feel like I've been fighting an oncoming sickness, had a headache and felt under the weather last couple of days. Looking forward to a rest day today and hit it hard tomorrow!
Day 2, the baked goods are calling out to me everywhere! Just knowing I can't have them makes the craving very persistant. After work today I think I'll make the banana cocoa loaf that Annie posted on facebook.
Breakfast was an omlet with no dairy topped with salsa, some extreme green and black coffee.
Lara bar for a snack, lunch was tomato herb soup (no dairy) and some paleo cereal with almond milk.
Caffeine free tea really helps with sugar cravings. If the tea smells sweet then sometimes I can trick my brain into thinking I'm eating sweets.
For dinner I think I'll have some apple chicken sausage with spaghetti squash. I'm going to have to be uber prepared for the row-a-thon this weekend.
Tried to make the milestones california omlette, but it's just not the same without goat cheese!
Had scrambled eggs and crisped proscuito and a piece of date/cashew bar.
Salad w/ italian sausage and chicken for lunch.
Energy seems good. Enjoy my lara bars too much so tried making a "cashew/date" lara bar snack. Raw cashewed in blender then same thing with dates. Mash it all up and flatten. wrap, cool and cut. I need to put more nuts next time but it's good.
By the strict definition, cashews are supposed to be out since they are somehow a legume (in the same way peanuts are). I'm for having them but I thought I'd put it out there for the same reasons as snap peas and green beans.

thought i'd share a fun little "dessert" recipe i found, which i'm obsessed with and tend to make as a snack during the day. (nick says its digusting and tastes like scrambled eggs. be forewarned)
"pear custard"
1 pear, sliced up really thin - place in bottom of a glass dish
combine 1/2 cup of a premium coconut milk with 2 eggs (i put them in a magic bullet)
sprinkle cinnamon over pears and pour liquid mixture overtop of pears. Bake at 355 for 35 minutes. let it sit for a few minutes. I love it!
Not feeling 100% this afternoon....headache kicked in around noon. I didn't plan well enough today and have been super hungry, and all I have is fruit/nuts/lara bar, back-to-back meetings so can't leave to get anything!! I am craving meat and veggies so bad....crazy.
Trying to get out of here early so that I can stop at Whole Foods before snowshoeing & fondue!!
Snack: Apple, almonds
Lunch: leftover chili, fruit salad, lara bar
I'm the opposite of yesterday--not very hungry! But I'm eating my meals anyways.
S: 1/2 banana & almonds
L: sauteed broccolini, sweet potatoes, chicken breast, a few pieces of dried fruit for something sweet
S: 1/2 banana, paleo muffin, almonds
I've been pretty sleepy all day and this is with two coffees! Made a pit stop at The Well on my way to work to try their Americano...still doesn't do it for me! I miss my latte!
Heading home...long day today. Ains! I will totally try your dessert. I am feeling a little stressed at work and think a glass of wine may be just the answer tonight but I will be good. Hopefully my bananas are ripe and I will make the loaf!

banana shake w unsweetened almond milk and sunbutter-yum!

Salad w tuna, red peppers, cucumber and olive oil and lemon juice. And fruit salad.
Snack:
Asian pear w walnuts and turkey slices.
On my way home for Scott's butter chicken on cauliflower rice for dinner!
Very unmotivated for dinner tonight, I find it hard to get inspired when cooking for one as Jenny is out tonight, that being said....

L: 2 Large Turkey Garlic Basil Sausages w/ dijon, Banana
Snack: Hanful of baby carrots with some almond butter (Strange combination but when your hungry...)2 Live squares (Mashed up dates and almonds) Handful of Pistacios
D: Green Coconut Curry from scratch...Green curry, coconut milk, little chicken stock, chicken, garlic, ginger, lemongrass, red pepper, onion, and some diced sweet potato to change it up. Pretty good.
Snack to Come: Sliced Apple and visions of a Ritter Sport Bar!!
Uninspired for dinner tonight...threw together some leftovers and called it that. Hard to start anything big when I get home from the Den at 8.
D: leftover rosemary chicken with mushrooms & green beans/roasted peppers/sauteed kale
dessert: a perfectly ripe mango :)
my mind has been wandering to chocolate lately...there was a BIG gingerbread cookie at work today and I was so proud that I walked away!
You guys have to do this:
Paleo banana bread
* Ingredients:
* 1 cup almond flour
* 2 eggs
* 1/4 cup olive oil
* 2 heaping tbsp cocoa powder
* 1 tsp pure vanilla
* 2 very ripe mashed bananas (overripe is great)
-I added unsweetened coconut, but optional. You could add chopped walnuts or maybe dried cherries. But delicious as is.
Mix all ingredients in a blender and bake for 25-30min @ 375 in a loaf pan lined w parchment paper.
Enjoy.
Ant your dinner sounded delicious and you should try this instead of visualizing Ritter sport. ;)

Pan seared halibut with tomato mango salsa (mango, tomato, white onion, apple, jalapeno, and lime juice). Beets, green beans and a few baby bok choy.
Actually turned out pretty well. My hands are now literally beet red.
I survived the fondue party! Managed to make it to Whole Foods on the way :)
Dinner: Salad with chicken, yams, lost of veggies, evoo, lemon juice. Beef pepperoni. Little bit of fruit for dessert.
Actually wasn't too difficult, while everyone else chowed down on cheese & chocolate, I enjoyed my salad and black coffee! And afterwards when we put our snowshoes back on, they were all moaning and feeling full, while I felt great :)
Beets were yummy this evening. You guys should try it! I think Geoff just cut them in half and baked them in the oven.
Low energy today but that's because I didn't have time to eat my entire lunch (just had veggies and one banana).
No other real changes so far. Lucy, a distant relative, is starting to influence my behaviour. Must be the food I'm eating and those genes we are sharing. Symptoms included eating with my right hand while holding a fork with the other in a very 'unladylike' way. Soon I'll stop talking and just growl.
I think Geoff might also be getting some side effects. He was burping very loudly at the gym this evening. Oh my...
Annie, glad to hear you liked you eggs! I think we're ready for another change soon.
How did you manage to ripen all those bananas in one night? They looked so green yesterday!
