Friday!
Breakfast this morning was an omlet sans dairy, 1 grapefruit, and black coffee.
I'm at the restaurant and lunch shifts usually mean no breaks so I will make myself a salad to take home with me and I also packed an apple and some banana cocoa coffee bread to snack on on the way home.

Tomorrow's the big row-a-thon! Going to stop by save-on on the way home and grab some stuff to pack, I have a feeling I'm going to be mocked at the cooler of food I'll be bringing.

Ains I'm definitely going to try your pear custard recipe, sounds yummy!

I'll be in the den around 5:30 tonight so see some of you there!

Morning peeps!
2 morning of sleeping in in a row! Love it. Actually makes the eggs and bacon easy on the tummy when it's not 5:30 in the morning!

Breaky:
1 grapefruit
2 eggs over easy w bacon and avocadoe w black coffee

Just about to pack my lunch and snacks for the day.

Happy Friday! I will try to make it for the 5:30...although I am so sore still from the darn ring dips!! :(

wet & soggy but yay! it's friday!!

B: poached egg white with dollop of guac, turkey sausage, coffee with splash of coconut milk

S: almonds, fruit salad

L: salad with lots of veggies, roast chicken, fresh squeezed lemon as dressing

Have a birthday celebration this weekend...should prove to be interesting. Haven't been out socializing since Paleo began. Frustrating part is that my birthday might get rolled into this celebration!! Will have to choose carefully from the menu & stick with sodas with a twist of lime. How I miss my wine!

Ains just told me about the blog so I figured I should jump in.

Here's the breakfast that I've since the start of this adventure
6 egg whits, 2 whole eggs, mushrooms, peppers, apple, and anywhere from 2-5 cups of black coffee.

What can I say, I can't control my coffee, even if black coffee takes some getting use to. It's almost as bad as coffee with almond milk, which I do not recommend.

Lunch was left over slow cooker stew

I'll be looking for some suggestions for dinner. Last night I made ains the salmon burgers recommended by Annie. They were pretty tasty, would have been better with a bunch of ketchup.

See everyone at 430 and don't try Ains' pear desert, NOT RECOMMENDED

Nick I'm glad you jumped in! I put some mayo on the lettuce for the salmon burger. But today I found some fancy 'provencale maille mustard' that has red peppers in it that will for sure spruce up my next burgers!

S: almonds, paleo muffin

larabar while running errands

D: leftover meatloaf, sauteed kale, spaghetti squash with tomato sauce

i have lots of food prep in store this weekend...the cocoa banana loaf, the salmon burgers, maybe a chicken green curry and butternut squash soup! the prep is the only way i can ensure i eat well during the week...thanks for all the great suggestions!

Here's another pear recipe I found:

-4 soft d'Anjou pears
-1/4 tsp cinnamon
-1/2 cup pecan halves or pieces
-1 tbsp ground almonds
-1/4 to 1/2 cup shredded unsweetened coconut

1. Cut pears into slices or small bite-sized chunks. Place in casserole dish with a lid.
2. Toss in pecans and sprinkle with cinnamon and ground almonds. Top with coconut.
3.Cover & bake at 350 degrees for 45 minutes or until pears are hot.

Once Paleo is over, imagine it with a scoop of vanilla ice cream! :P

Enjoy!

Chocolate Banana Loaf is so good and soo easy!! I added some unsweetened shredded coconut but next time, I think I'll add some chopped walnuts! There are some great recipes on that website (tastypaleo.com)! Are we allowed honey?? I didn't think so but some of the recipes call for honey...

That tuna melt actually looks delicious!
Sorry Mish, no honey.

My day so far:

Lunch:
left over butter chicken w pineapple and blueberries and a little more of our banana loaf to finish it

Snack:
1 apple w sunbutter and 2 pepperoni links

Dinner:
Made a red curry w red snapper, coconut milk, peppers, baby bok choy and spinach. It was delicious.
Handful of nuts and a couple of dates for dessert.

Feel like I won't be able to go to sleep without a snack...not sure what, pacing around the kitchen...
