Sorry I missed a day!
Saturday lunch:
left over steaks, mushrooms and yam fries w figs and almonds
Snack:
some butternut squash soup, 1 asian pear and sunbutter
Dinner:
I panfried some pork chops w apples and cinnamon. Served w a baked sweet potatoe and brocoli. Delicious!
Sunday morning breakfast was apple pork sausages and oatmeal paleo style. It was delicious so recipe to follow!
Oatmeal Paleo style
• Ingredients:
• 2 tsp cinnamon
• 1 acorn squash
• 2 tsp almond butter
• chopped dates, raisins, walnuts to taste
• handful flax seeds
Directions:
Preheat oven to 400.
Cut and gut the acorn squash.
Place on roasting pan and place in oven, face down.
Cook for 30-40min, or until flesh is soft.
Take squash out of oven and scoop flesh into large bowl. Mash flesh with almond butter, cinnamon, and desired ingredients: raisins and walnuts would be awesome.
Scoop back into shells and then sprinkle with flax seeds and a bit more cinnamon.
Hearty, hot, and weirdly yummy.

Pre Run: 1/2 banana, a few almonds, turkey slice
Matt and I took Olive for a trail run up near Lynn Loop - such a beautiful morning, love feeling the sunshine!
We do this run quite often - and I ALWAYS get bad IT band pain in my left leg. Like clockwork, every single time...
But not today!!! So crazy, I had zero pain. Could it be that everything is less inflamed because of Paleo?? Felt so good.

I am off to Victoria for 4 days, so I will be finishing the challenge over there, eating out every meal!!

Jenny I salute you. I only went out 3 meals this past 30 days and it is so much easier to stay clean and strict at home.
I read day 28 and I can hardly believe it!
Funny enough I am not dying of a cheat. But rather sitting here thinking how I have enjoyed the last 28 days. How much I have enjoyed getting back into cooking and baking and trying out new yummy recipes. I will still be enjoying a bowl of icecream in a couple of days! Because a girl needs a treat every now and then and I have a long week of loneliness ahead with Scott away.
lunch:
salad w a can of tuna, red pepper, cucumber, seasoning, walnuts, pomegranate and lemon juice and evoo
Snack:
left over pomegranate, and a handful of mixed nuts
Dinner:
left over pork chops, apples, sweet potatoes.
I am baking the chocolate banana loaf again tonight.
I have to drag my butt back to the den tomorrow. I just took an unexpected week off. I didn't mean to but lack of sleep and sickness in the house and it just happened. Funny enough I feel more tired and lethargic than ever! My body needs motion!
Forgot to share a small success story.
I had blood test last week and my iron is as good as it has ever been! Don't know if I absorb nutrient better on Paleo but my doc was real impressed as well.
Jenny I totally believe the IT connection is for real too.

Almost there!! I am sitting here dying for a glass of wine. I agree, staying home is so much easier on Paleo--but my social life has definitely suffered! I have learned a lot about cooking and baking the last few weeks...mostly, that I CAN do them and I DO enjoy them!! I guess I better decide what days 31-60 are going to look like...it is not going to be as strict as the first 30 for sure! Is anyone else continuing past 30 days?
I made the chocolate banana loaf yesterday--added walnuts & coconut this time for a little extra crunch--so good!
B: sausage, spinach omelet, 1/2 grapefruit, tea with almond milk
S/L: was out all day running errands...banana/berry smoothie, Larabar, almond milk latte, some dried fruit, almonds
D: spinach, beets, turkey burger w/guac

I'm not dying to cheat either...I feel really good, headaches are happening way less often etc. I took my measurements this morning, didn't take them at Day 1 this time, but compared them to the ones I had from the summer, and they have all gotten smaller!!
Matt and I are planning to keep eating this way, with the exception of special occasions, family dinners, vacations etc. Bridal Bootcamp still has 8 months to go!!
Lunch was leftover pulled pork, coleslaw, grapefruit.

Dinner is going to be steak, broccoli and yam fries (I know, I know, not ideal but I couldn't resist) from Brown's...

Went to my parents house for dinner, they were having chicken tetrazinne, caesar salad, and garlic bread, all of
which I couldn't eat, so I bbq'd some chicken breast and heated up some leftover spaghetti sauce. I also couldn't have the angel food cake with lemon meringue filling for dessert, so I had an apple:{
Misch, Scott and I are really enjoying the food and plan to stay on it like Matt and Jenny with a few liberties around socializing and such cuz we're human! But I feel so good and not deprived at all. I believe in the 90/10 principle. As long as we are good 90% of the time, a bowl of ice cream or a glass of wine never killed anyone!
I whipped up a paleo friendly breading last night to liven up the chicken I put on my spinach salad and it was soo tasty! Pre-coated the chicken with evoo, then coated with almond flour, salt, pepper, garlic powder and drizzled a tiny bit of chili oil on top and baked them. Really good!
Breakfast this morning was omlet with lots of veggies, and dinner was a salad with almond, grilled chicken and berries. No lunch because I was working this afternoon. On my way home now for an apple before bed :)

D: Was a tricky one...house warming party...managed some sausages, ribs (no sauce) and some fruit.
I feel pretty good as well. I plan on trying to eat this way for the most part, definitely dinners as they are the easiest to prepare.
Annie, I believe in the 90/10 as well but I think I believe a little more in the 80/20 ! :)
oh for sure...it's not that i ate poorly before but definitely had my weaknesses...milk lattes, wine, baked goods...will have to think about how often i want to give into these cravings. 90/10 seems about right. I still haven't weighed myself but I really don't think I've lost any weight or inches so far. haven't noticed more energy or changes in physical endurance either...weird.
