Here's my snack and the recipe: Egg custard and blackberries-yumm!
Coconut Custard mmmm
From Kelly Frankson blog: A delicious snack for those looking to get some good fat in their diet:
Ingredients · 6 lg eggs · 1 tin coconut milk
Instructions: Preheat oven to 325 degrees. Place rack in center of oven. Beat eggs and coconut milk until frothy. Pour mixture into 8″ by 8″ baking dish or individual c. Place in larger pan filled with hot water. Water should be halfway up the sides of baking dish. Bake 30-45 minutes or until knife inserted in center comes out clean. Be careful not to overbake. If serving hot, spoon into dishes; if serving cold, allow mixture to cool before cutting into squares. Transfer to a large bowl, cover and place in the fridge to cool for 30minutes before serving.
You can even try sprinkling some cinnamon on top! (I sprinkled w cinnamon before baking and loved it) Delicious!
Ok so Annie told me I needed to post what I eat so here I am.
Geoff is basically feeding me because I never have enough time but I'll be the one writing stuff on here. Plus I suspect he's only eating paleo at home. ;-)
B: scrambled eggs with sundried tomatoes and basil (used a bit of almond milk to add a bit of 'moisture'), apple slices, oranges, 1/2 banana
Snack: almonds, celery sticks
L: salad with a crapload of veggies in it + sunflower seeds + roasted chicken. Orange flavored olive oil as dressing.
D: beef stew with mashed cauliflower
All I can say is I'm glad we bought 1/8 of a cow a few weeks ago...
In case some of you didn't know, there is a great butcher we go to and they make delicious sausages. Here's a link with some reviews + address. Close to PNE.
Same as Annie except lunch which I bought at school. I compromised by going to the organic spot on campus and had a veggie chili and broccoli salad. There were a few beans in the chili so not strictly paleo but better than subway or pizza, right?

L: 2 x turkey sausages, 1/4 Avocado, 3/4 apple
Snacks (1-4pm): dried mango pieces, baby carrots (10), americano misto and 1 pc elevate me (non-paleo, i know), 2 pieces sliced turkey and a banana
Dinner will consist of meat and veggies and perhaps a few yam fries if im feeling dangerous.

I just had the best snack! Sunflower butter on apple, not as good as my PB, but definitely a worthy substitute. :)

dinner left overs, steak,sweet potatoes,prawns and asparagus. 1 clementine for dessert.

in the slow cooker made by Scott; stew beef w canned tomatoes and cabbage w some spices, the house smells very good.
