Just a couple food things...

I had the best bison ribeye with avocado salsa ever last night (link below). It was so good I took a crack at solving that time travel puzzle just so I could re-eat it! **side note** If I come into training driving a Rolls, I was successful!

Oh, and I added some chopped up jalapeno and orange pepper to it as well:

I used half almond meal and half coconut flour, almond milk instead of coconut milk and went with the pumpkin option... **side note 2** Canned pumpkin is NOT in the damn canned veg isle! After a 5 minute search and plenty of cursing at Superstore for having canned bamboo shoots yet no canned pumpkin, I dejectedly ventured through the baking section to get to the almond milk and lo and behold, I found it there!!... The cookies turned out great. Like mini pumpkin pies to go. The outside is hard-ish and the inside is kinda mushy and tastes pumpkin-y (these are technical cooking terms I know!)

This may be my only post, but I feel like I've met my commitment in terms of contributing to the group discussion. I was horrible at consistently writing in my journal in the first grade too, so some things never change!

Hey Drew (or anyone else who can help), where did you find coconut flour? There are a few recipes I want to try out that use it, but I haven't been able to find any yet (haven't looked too hard).

Breakfast: Hardboiled eggs, ham and tomato

Snack: Kiwi and a banana

Lunch: Beef burger patty, tomato, broccoli, and a bit of leftover chicken

Snack: Almonds + another kiwi

Dinner: 9 pieces tuna sashimi, 9 pieces salmon sashimi. If you've never been to sushi town, watch out, they have big servings.

Post dinner: Grapes + raspberries (I know, tons of fruit today. I'll cut back)

Also picked up a book from amazon: Paleo Comfort Foods. Surely some good recipes to come.

Mike- they sell coconut flour at Save on in the organic section, I think the brand is red mill. I've found that sometimes with organic products, it's actually cheaper to buy at Whole Foods because they buy larger stocks of it. Might be worth investigating.

Also, if you want different flours to bake with sometimes the bulk section is the way to go. They have almond flour, rice flour etc and it's half the price of the organic stuff. Only problem is you don't really know what's in it.

Thanks Lauren! I've been using up my almond flour I got from Trader Joe's a month back and will soon need some more.

What up peeps. Sorry i haven't been posting. No excuse. Everything is still going well and to be honest my food is the same over and over so not good recipe ideas from this kid. I am certainly eating more fruit than prescribed and too many nuts but I am still getting really good results so I am not going to mess with it.
1: post workout: 2 eggs, sweat potatoes, bacon
2: beef stir fry and an orange and nuts
3: Handful of nuts (got stuck at work without food)
4: roast beef with shredded broccoli, apple and raisins mixed with mustard and a tbs of mayo ( This makes a massive amount of it so very little mayo.

Yes coconut flour is pretty expensive, and you can get it at save-on. I try and make things with almond meal/flour now because it's in the bulk section! Anyway today:

Breakfast: Bacon, eggs, fruit
Lunch: ground turkey pattie, veggies
Dinner: I made a spaghetti sauce with ground turkey...put it in a bowl and ate it..yummm

Then I made paleo banana nut muffins!!! Using almond meal, some eggs, bananas, chopped pecans..easy to make, and so good!!

Breakfast:
Chicken breast and nuts and a few rasberries
Lunch:
left over curry meatballs, roasted cauliflower and mashed yams.
Dinner:
Stir fry with baby bok choy, ground turkey, mushrooms and onions. Used gluten free beef broth and chinese 5 spices for flavor. Delicious! Had two servings because I was starving, forgot to snack all day.
Snack:
1/2 apple pear with some almond butter
